The oyster season just ended in the LowCountry. They can only be harvested in months with an "R". Anyway.....I have this craving for oysters and the best place to get them now is in Prince Edward Island Canada. PEI is know for its mussels but their oysters are nothing short of incredable. Actually they are harvested in the Hillsborough River right in front of my cottage. Now these little jewels are not cheap. I have seen them as high as 2 dollars each where this pic was taken last Summer in Charlottetown ... worth every penny. And check this out...you cannot open your own oyster....they are shucked for you. Some kind of Canadian safety thing. As you might guess....I frequent this pub quite often, eat a bunch and have my favorite oyster shucker. I call him Fast Eddie and he has the distinction of winning the shucking contest in the local seafood fest a few years ago. So if you are craving an oyster head for the Canadian Maritimes and check out Fast Eddie. And while you are at it, wash them down with a "Christmas"....only the finest draft beer in all of Canada, if not the world.
